Magali & David Bourmaud

These two kindred spirits met on the benches of catering school and have been inseparable ever since. After honing their craft from Normandy to the Côte d’Azur, they returned to the region where they grew up and took over Le Petit Saint Thomas in 2001. Devoted to their trade, they share the values closest to their hearts: working with fine, beautiful produce, brought to life through a warm and attentive welcome.

Our commitments:
made to measure, made in-house, and fine local produce in season.

The quality-driven, eco-responsible choices we have made lead us to source as much produce as possible from nearby growers, most of it organically farmed. Our guiding principle: work with raw ingredients and craft everything in-house. We are, in fact, certified Maître Restaurateur de Vendée.

To honour these commitments, we rely on a network of passionate local producers working in short supply chains: organic market gardeners, wild foragers, regional farmers and fishermen, and many more.
